Cajun Paella recipe
This Cajun-inspired paella recipe is kicked up with Cajun spices. If you don’t have a jar of Cajun spice in the cupboard, toss together a mix of cumin, chili powder, oregano, and cayenne. A quick fix!
Ingredients:
2 tablespoons olive oil
½ pound Italian sausage, sliced
½ pound boneless, skinless chicken breasts, sliced
1 red onion, diced
1 red bell pepper, diced
3 cloves garlic, diced
1 tablespoon paprika
2 teaspoons Cajun spice mix
1 (15-ounce) can diced tomatoes, in juice
1 (14-ounce) can chicken broth
1 cup frozen peas
1 cup sweet corn
2 cups instant rice
12 shrimp, frozen, cooked, peeled
Salt and pepper, to taste
Directions:
1) Heat oil in a large stockpot over medium. Add sausage, chicken, and onion; cook 5 minutes, stirring occasionally. Add bell pepper, garlic, paprika, and Cajun spice; cook 3 minutes, stirring.
2) Add tomatoes, broth, peas, corn, rice, and shrimp; bring to a boil over high heat. Cover and simmer 20 minutes. Season with salt and pepper. Serve hot.
