Paella Stuffed Bell Peppers recipe

Enjoy leftovers of any of our paella recipes in this dish for stuffed bell peppers. Just stuff with the pre-made paella, bake, and enjoy dinner in a snap!

Ingredients:

4 cups prepared paella of choice
1 cup crumbled feta cheese
8 small red or green bell peppers
2 tablespoons olive oil

Directions:

1) Preheat oven to 350°F. Combine paella and cheese in a large bowl; mix well and set aside.

2) Cut tops off of bell peppers. Remove seeds and inner white pith, leaving the rest of the pepper intact.

3) Stuff each pepper with ½ cup of paella mixture; arrange cut side up on a baking sheet.

4) Drizzle tops of peppers with olive oil. Bake 30 minutes, until tops are golden and peppers are softened. Serve warm.
