Quick Paella recipe
Calling upon instant rice, this paella recipe is the go-to choice for a quick after-work fix. It’s got all the ingredients to make satisfying paella, but cooks in about half the time!
Ingredients:
2 tablespoons olive oil
½ pound Italian sausage, diced
½ pound boneless, skinless chicken breasts, diced
1 onion, diced
1 red bell pepper, diced
3 cloves garlic, diced
1 tablespoon paprika
1 (15-ounce) can diced tomatoes, in juice
1 (14-ounce) can chicken broth
1 cup frozen peas
2 cups instant rice
12 shrimp, frozen, cooked, peeled
Salt and pepper, to taste
Directions:
1) Heat oil in a large stockpot over medium. Add sausage, chicken, and onion; cook 5 minutes, stirring occasionally. Add bell pepper, garlic, and paprika; cook 3 minutes, stirring.
2) Add tomatoes, broth, peas, rice, and shrimp; bring to a boil over high heat. Cover and simmer 15 minutes. Season with salt and pepper. Serve hot.
