Spicy Mexican-Inspired Paella recipe
This paella is muy delicioso! Inspired by flavors of Mexican cuisine, it’s full of spices, sweet vegetables, and lime juice for a great paella off-the-beaten-path.
Ingredients:
2 tablespoons olive oil
2 spicy sausage links, sliced
1 pound large shrimp, peeled
1 large onion, diced
2 red bell peppers, seeded, diced
3 cloves garlic, crushed
1 tablespoon smoked paprika
1 teaspoon cumin
½ teaspoon chili powder
¼ teaspoon red pepper flakes
1 (15-ounce) can chicken broth
1 (15-ounce) can diced tomatoes, in juice
1 ½ cups long-grain white rice
1 cup sweet corn
Salt and pepper, to taste
1 lime, cut into wedges
Directions:
1) Heat oil in a large skillet or wok over medium-high. Add sausage; cook 3 minutes, stirring occasionally. Add shrimp; cook until shrimp turns pink, stirring, about 3 minutes. Remove sausage and shrimp from skillet; set aside.
2) Add onion to skillet; cook 3 minutes, stirring occasionally. Add bell peppers, garlic, paprika, cumin, chili powder, and red pepper flakes; cook 4 minutes, stirring.
3) Add broth, tomatoes, rice, and corn; stir and bring to a boil over high heat. Reduce to a simmer, cover, and cook 30 minutes. Season with salt and pepper; serve hot with lime wedges.
